Pancake day :)

Yum, yum, yum!  Pancake Day was good! I couldn't resist making a nice stack of yummy pancakes, layered with Nutella, bananas and strawberries. I tweaked a standard pancake recipe, by adding some ground almonds and soya milk instead of dairy.

You will need:
-50g of  plain flour 
-50g of ground almonds
-2 eggs
-250ml of milk 
-1 tbsp of oil (and extra for frying)
-pinch of salt

I am not gonna lie, I just mixed the ingredients together and whisked them until smooth. No sifting, making a well in the middle etc. Do whatever works for you, longs you get a smooth batter at the end. 

Spray a hot pan with oil, pour in some batter and spread evenly by tilting the pan. Fry  for 30 seconds, flip and fry for another 30 seconds (on medium heat). I used a small pan so the flipping was easy. The bigger the pancake, the harder it is to flip.
